Spoon Bread(Cornbread Souffle) - cooking recipe
Ingredients

3 c. milk
1 1/4 c. white cornmeal
3 eggs
2 Tbsp. butter
1 3/4 tsp. baking powder
1 tsp. salt
Preparation

Stir meal into rapidly boiling milk.
Cook until very thick. Stir constantly to prevent scorching.
Remove from heat.
Allow to cool.
Let mix become cold and stiff (if time permits).
Add well beaten eggs, salt, baking powder and melted butter.
Beat with mixer for 15 minutes (if time permits).
Pour into well-greased casserole pan or iron skillet.
Bake for 30 minutes at 375\u00b0. Serve immediately with lots of butter.
(The souffle will fall.)
