Crunch Top Banana Loaf - cooking recipe

Ingredients
    2 c. rice cereal squares
    3/4 c. chopped pecans
    2 Tbsp. brown sugar
    1 Tbsp. melted margarine
    1/2 c. margarine
    1/2 tsp. baking soda
    1 c. sugar
    1 egg
    2 tsp. baking powder
    2 c. flour
    1 c. mashed ripe banana
    1/2 c. buttermilk or sour milk
Preparation
    Crush cereal with rolling pin to make 1 cup crumbs.
    Combine 1/4 cup cereal crumbs and 1/4 cup pecans, brown sugar and 1 teaspoon melted margarine; set aside.
    Cream the margarine and sugar until fluffy.
    Add egg, banana and buttermilk; mix well. Stir together flour, baking powder, baking soda and 1/4 teaspoon salt.
    Add to creamed mixture; mix well.
    Fold in remaining cereal crumbs and nuts.
    Turn into greased 9 x 5 x 3-inch loaf pan. Sprinkle reserved crumb mixture on top.
    Bake at 350\u00b0 for 55 to 60 minutes.
    Cool 10 minutes; remove from pan and cool completely. Makes 1 loaf.
