Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    3 c. peeled, grated zucchini squash
    2 tsp. vanilla
    3 c. flour
    1/4 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    3 tsp. cinnamon
    1/2 c. chopped nuts (optional)
Preparation
    Beat eggs until light and fluffy.
    Add oil and sugar; mix well.
    Add squash, vanilla, flour, baking powder, soda, salt and cinnamon.
    Mix well; pour into greased pans.
    Makes 2 loaves. Bake at 325\u00b0 for 1 hour.
