Apricot Bread - cooking recipe

Ingredients
    1 c. snipped dried apricots
    2 c. warm water
    1 c. sugar
    2 Tbsp. butter or margarine, softened
    1 egg
    3/4 c. orange juice
    2 c. flour
    2 tsp. baking powder
    1/4 tsp. baking soda
    1 tsp. salt
    3/4 c. chopped nuts
Preparation
    Soak the apricots in the warm water for 30 minutes.
    In a mixing bowl, cream the sugar, shortening and egg.
    Stir in orange juice.
    Combine the flour, baking powder, baking soda and the salt and stir into the creamed mixture just until combined.
    Drain the apricots well and add with the nuts to the mixture.
    Pour into a greased 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 55 minutes or until the bread tests done.
    Cool 10 minutes in the pan before removing to a wire rack.
    Yields 1 loaf.
