Zucchini Rounds - cooking recipe

Ingredients
    1/3 c. Bisquick
    1/4 c. grated Parmesan cheese (optional)
    1/8 tsp. pepper
    2 eggs
    2 c. shredded, unpeeled zucchini
    1 tsp. chopped onion (optional)
    oil
Preparation
    Mix eggs, Bisquick, cheese, pepper, zucchini and onion.
    Drop 2 tablespoons per round into hot oil in skillet.
    Fry about 3 minutes per side.
    (Line up on edges to drain instead of laying flat and they'll stay crisper.)
