Grated Pumpkin Bread(Yield: 1 Loaf) - cooking recipe

Ingredients
    1 c. raisins
    1/4 c. water
    3 eggs
    3/4 c. sugar
    1 c. oil
    2 1/2 c. grated raw pumpkin
    1 tsp. vanilla
    2 3/4 c. flour
    2 tsp. cinnamon
    1 tsp. mace
    1 tsp. salt
    1 tsp. baking powder
    1 tsp. baking soda
Preparation
    Cover raisins with water to plump.
    Beat eggs thoroughly and mix in sugar, oil, pumpkin and vanilla.
    Sift together remaining ingredients.
    Mix into pumpkin mixture, beating well.
    Drain raisins and stir into the batter; pour into greased and floured 9 x 5-inch loaf pan.
    Bake in preheated 350\u00b0 oven for 1 to 1 1/4 hours or until toothpick comes out clean.
    Cool on rack for 15 minutes before turning out of pan.
