Zucchini Provencal - cooking recipe

Ingredients
    1 small onion, sliced
    2 Tbsp. oil
    2 tomatoes, peeled and quartered
    1/3 c. diced green pepper
    1 clove garlic, crushed
    salt and pepper to taste
    grated Parmesan cheese
    chopped parsley
    2 medium zucchini, cubed
Preparation
    Saute onion in oil in a skillet until tender.
    Stir in zucchini, tomatoes, green pepper, garlic and seasonings; cover and cook over medium heat 10 to 12 minutes, or until vegetables are tender.
    Transfer to a serving dish and sprinkle with cheese and parsley.
