Cantaloupe Bread - cooking recipe
Ingredients

3 eggs
1 c. oil (vegetable oil)
2 c. sugar
3 tsp. vanilla
2 c. cantaloupe, pureed
3 c. flour
1 tsp. salt
1 tsp. soda
3/4 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. ginger
1 c. chopped nuts
Preparation

Beat eggs.
Add oil, sugar and vanilla.
Cut melon into small pieces and puree.
Add to egg mixture.
Sift in dry ingredients; add to liquid.
Pour into 2 greased and floured 9 x 5-inch loaf pans.
(I used 3 smaller pans.) Bake at 325\u00b0 for 1 hour, or test for doneness.
May be frosted.
