Italiano Zucchini(Serves 4.) - cooking recipe

Ingredients
    1/2 c. onions
    1/4 c. green peppers
    2 celery stalks
    1 garlic, minced
    1 Tbsp. soy oil
    5 tomatoes, cored and chopped
    1 large zucchini, sliced in spears
    1 tsp. Italian seasoning
    sea salt and pepper to taste
    parsley sprigs
Preparation
    Chop onions, peppers and celery.
    Place in a pan with garlic; saute in oil.
    Add remaining ingredients; cook, covered, until zucchini is done.
    Remove cover and evaporate tomato water.
    Serve with sprigs of parsley on top.
