Zucchini Bread - cooking recipe
Ingredients

3 eggs, well beaten
2 c. sugar
1 c. oil
1 Tbsp. vanilla
2 c. shredded, squeezed zucchini (2 good-sized zucchini)
2 c. flour
1 Tbsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1 c. pecans
Preparation

Preheat oven to 350\u00b0.
Grease and flour 3 loaf pans (medium) or 6 small loaf pans.
Mix together eggs, sugar, oil and vanilla. Beat until lemon colored.
Shred zucchini, salt lightly and squeeze juice out.
Add to mixture.
Sift together flour, cinnamon, salt and baking soda.
Add to wet mixture and mix well. Stir in pecans.
Pour into pans.
Bake medium loaf pans 50 to 60 minutes and bake small loaf pans 35 minutes.
