*Zucchini Cake - cooking recipe

Ingredients
    2 c. sugar
    1 c. oil
    3 eggs
    1 tsp. vanilla
    1 tsp. salt
    1 tsp. baking powder
    1 tsp. baking soda
    3 tsp. cinnamon
    3 c. flour
    2 c. peeled and grated zucchini
    1 or 1/2 c. chopped nuts (optional)
Preparation
    Mix oil and sugar; add eggs, one at a time, beating after each addition.
    Add vanilla.
    Sift together dry ingredients and mix with the creamed ingredients.
    Add zucchini and nuts.
    Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.
    Bake in a 350\u00b0 preheated oven for 50 minutes to 1 hour.
    Cool in pan for 10 minutes.
    Cool right side up on rack.
