Aunt Brigie'S Irish Soda Bread - cooking recipe

1/4 c. shortening, chilled
3 c. flour
1/4 c. sugar
3 Tbsp. baking powder
1 Tbsp. baking soda
pinch of salt
1 egg, well beaten
1 1/2 c. buttermilk
1 1/2 c. raisins
Preparation

Mix flour, sugar, baking powder, baking soda and salt in a large bowl.
Rub shortening into dry ingredients.
Mix eggs and buttermilk and add to flour mixture, stirring well.
Add raisins and mix well.
Place in an ovenproof skillet or a 9-inch round cake pan (greased), spreading dough to fill pan.
Cut a cross in the top of the dough to prevent cracking.
Bake at 375\u00b0 for 45 minutes to an hour.
Do not preheat oven.
