Zucchini Cake (Bread) - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 1/2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
2 1/2 tsp. cinnamon
1/2 c. chopped walnuts
Preparation

Beat eggs until light and frothy, then add oil, sugar, zucchini and vanilla and blend lightly.
Then combine dry ingredients and add to egg mixture (don't blend).
Just stir dry ingredients until well blended.
Bake at 325\u00b0 for 1 hour.
Grease and flour 2 bread loaf pans.
If pans are small, bake for 40 minutes, using 3 pans.
