Zucchini Relish - cooking recipe

Ingredients
    10 c. minced zucchini
    1 c. pickling salt
    5 c. minced onions
    1 c. chopped celery
    4 green peppers, chopped
    2 sweet red peppers, chopped
    2 tsp. turmeric
    1 Tbsp. dry mustard
    3 Tbsp. celery seed
    6 c. white sugar
    5 c. white vinegar
    3 Tbsp. cornstarch
Preparation
    Combine zucchini with other vegetables and salt.
    Allow to stand 4 hours or overnight.
    Drain.
    Rinse and drain again. Press out excess liquid.
    Combine vegetables and remaining ingredients.
    Bring to a rolling boil.
    Reduce heat and boil gently for 20 minutes. Ladle into hot jars.
    Process in boiling water for 15 minutes.
    Yields 8 pints.
