Coconut Iced Cookies - cooking recipe

Ingredients
    2 envelopes plain Knox gelatine
    1 c. sugar
    1/2 c. cold water
    1 c. light Karo corn syrup
    2 tsp. vanilla
    Nilla wafers or gingersnaps
Preparation
    In large mixing bowl, dissolve gelatine in 1/2 cup water.
    Set aside.
    Bring to a boil the sugar and corn syrup.
    Pour hot syrup over gelatine mixture; stir to blend.
    Cool thoroughly.
    Add vanilla.
    Beat 8 to 10 minutes.
    Let stand 3 minutes.
    Spoon onto wafers or gingersnaps.
    Roll in coconut.
