Banana Fritters - cooking recipe
Ingredients

1 1/2 c. flour
6 Tbsp. sugar
3 eggs
1 c. milk
4 to 5 medium ripe bananas, mashed
vegetable oil for deep frying
confectioners sugar
Preparation

In a deep mixing bowl, stir the flour and sugar together.
Beat the eggs one at a time.
Using a whisk add milk to eggs beating constantly.
Beat batter until it is smooth and elastic.
Mash bananas to a smooth puree.
Stir the banana puree into the batter and let the mixture rest at room temperature for 30 minutes.
Heat oil in a pan to 375\u00b0.
Drop about 1/4 cup of batter into oil and fry on each side until golden brown.
Sprinkle with confectioners sugar.
