Zucchini Jelly - cooking recipe
Ingredients

6 c. grated zucchini
1/4 c. lemon juice
1 c. crushed pineapple
6 c. sugar
1 large pkg. Jell-O (strawberry, peach or apricot)
Preparation

Cook zucchini and lemon just on low heat (simmer) for 15 minutes.
Add pineapple and sugar; bring to a boil.
Remove from heat and stir in Jell-O.
Pour into jars and seal.
Serve it over biscuits or in pinwheel tea sandwiches.
This is colorful, delicious and makes nice gifts.
