Zucchini Relish - cooking recipe

Ingredients
    12 c. ground zucchini
    4 c. ground onions
    5 tsp. canning salt
    2 1/2 c. vinegar
    5 c. sugar
    1 tsp. dry mustard
    3/4 tsp. nutmeg
    3/4 tsp. turmeric powder
    2 Tbsp. cornstarch
    1 1/2 tsp. celery seed
    1/2 tsp. pepper
    2 large red peppers, ground
Preparation
    Grind zucchini and squeeze water out.
    Measure to make 12 cups.
    Mix zucchini with onions and salt.
    Allow to stand overnight.
    Rinse with cold water and drain.
    Squeeze out excess water with hands.
