Saucy Zucchini Bake - cooking recipe
Ingredients

8 medium zucchini
1/2 lb. fresh mushrooms
oil
4 cloves garlic
2/3 c. grated Romano cheese
1 (12 oz.) can tomato paste
salt and pepper to taste
1 tsp. each: oregano and parsley
1/4 c. flavored bread crumbs
Preparation

Cut zucchini into medium thin wheels; slice mushrooms. Lightly saute together in oil with garlic and spices until tender. In a casserole, grease with olive oil.
Pour mix into casserole; stir in grated cheese and tomato paste.
Sprinkle bread crumbs on top.
Cover and bake about 20 minutes at 350\u00b0.
Take foil off and return to oven for about 5 more minutes.
