Banana-Cranberry Holiday Bread - cooking recipe
Ingredients

4 tsp. butter
1 (12 oz.) bag cranberries (3 c.)
2/3 c. walnuts, finely chopped
1/2 tsp. ground cinnamon
grated peel of orange and lemon
1/3 c. fresh orange
2 tsp. fresh lemon
2 c. mashed ripe bananas (about 5 medium size bananas)
3/4 c. packed brown sugar
1/4 c. sugar
3 large egg whites
1 large egg
2 c. flour
2 c. whole-wheat flour
4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Preparation

In a 12-inch skillet over medium heat, in
hot butter, cook cranberries, chopped nuts and cinnamon about 10 minutes or until cranberries pop, stirring mixture frequently. Remove skillet from heat. In large bowl, stir together orange and lemon peels and juice, mashed bananas, brown sugar, egg whites and egg. Grease two 9 x 5 x 3-inch loaf pans. In medium bowl, stir together flour, whole-wheat flour, baking powder, baking soda and salt. Add to egg mixture. Stir until blended. Fold in cranberry mixture just until mixed. Spoon into prepared pans and bake for 50 minutes to 1 hour. Let stand for 10 minutes. Cool on wire rack. Makes 12 loaves.
