Zucchini Relish - cooking recipe

Ingredients
    10 c. zucchini
    4 c. onion
    1 red or green pepper
    2 1/4 c. dark vinegar
    6 c. sugar
    1 Tbsp. dry mustard
    1/2 Tbsp. turmeric
    2 tsp. celery seed
    1 or 2 tsp. nutmeg
Preparation
    Grind together the zucchini, onion and green pepper.
    Add 3 tablespoons salt.
    Cover with cold water and let stand overnight. Then pour off the liquid and rinse with cold water.
    Add rest of ingredients and bring to a boil and cook 30 minutes.
    Seal in hot jars.
