Zucchini Al Forno - cooking recipe

Ingredients
    4 lg. zucchini
    2-3 Tbsp. flour
    1 c. oil
    8 eggs, beaten
    4 Tbsp. milk
    Salt and pepper
    1/3 c. grated Parmesan cheese
    2 Tbsp. fresh basil leaves, roughly torn
    3 Tbsp. fresh white breadcrumbs
Preparation
    Preheat oven to 375\u00b0.
    Top and tail the zucchini and cut lengthwise into 1/2 inch slices.
    Coat the slices in flour and fry until they are crisp and golden.
    Oil a circular ovenproof dish and arrange the zucchini slices like the spokes of a wheel.
    Beat together the eggs, milk, salt, pepper and half the cheese.
    Add the basil leaves and pour over the zucchini.
    Sprinkle with breadcrumbs and remaining cheese.
    Bake for 15-20 minutes.
