Ingredients

1/2 c. sugar
3/4 c. butter, softened
1 Tbsp. grated lemon peel
1 egg
1/2 tsp. cream of tartar
1/4 tsp. salt
1/2 c. powdered sugar
1/4 c. oil
1 Tbsp. lemon juice
2 1/2 c. flour
1/2 tsp. baking soda
Preparation

In a bowl beat sugar, powdered sugar, butter and oil until light and fluffy.
Add lemon peel, lemon juice and egg, blending well.
Stir in flour, cream of tartar, baking soda and salt, mixing well.
Cover with plastic wrap and refrigerate for 1 hour.
