Zucchini Bread - cooking recipe

Ingredients
    4 c. coarsely shredded zucchini (no blender)
    3 c. all-purpose flour
    2 1/2 c. sugar
    1 1/4 c. vegetable oil
    4 eggs, beaten
    1 Tbsp. plus 1 tsp. vanilla
    1 Tbsp. ground cinnamon
    1 1/2 tsp. baking soda
    1/2 tsp. baking powder
    1 c. raisins
    1 c. chopped nuts
    1 c. coconut, if desired
Preparation
    Heat oven to 325\u00b0.
    Grease bottoms only of 2 loaf pans (9 x 5 x 3-inch).
    Blend all ingredients on low speed for 1 minute, scraping bowl constantly.
    Beat on medium speed for 1 minute. Don't overmix.
    Pour into pans.
    Bake until wooden pick inserted in center comes out clean, 50 minutes to 1 hour.
    Cool 10 minutes. Remove from pans.
    Cool completely.
    Yield: 2 loaves.
