Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 tsp. baking soda
    2 c. sugar
    1 tsp. salt
    2 tsp. vanilla
    1/2 tsp. baking powder
    2 c. coarsely shredded zucchini
    3 c. flour
    1 1/2 tsp. cinnamon
    3/4 tsp. nutmeg
    1 c. cooking oil
Preparation
    In a large mixing bowl, beat eggs.
    Slowly add oil, sugar and vanilla.
    Continue mixing until thick and foamy.
    Stir in zucchini.
    In another bowl, stir together the flour, nutmeg, salt, cinnamon, baking powder and baking soda.
    Stir dry ingredients gently into zucchini mixture until just blended.
    Pour into 2 greased 9 x 5-inch loaf pans.
    Bake at 350\u00b0 for about 1 hour. Cool in pan 10 minutes before removing to rack.
    Makes 2 loaves.
