Zucchini Relish - cooking recipe

Ingredients
    8 c. ground zucchini
    3 green peppers
    3 onions
    3 celery sticks
    3 Tbsp. salt
    2 c. vinegar
    3 c. sugar
    1 tsp. turmeric
    2 Tbsp. mustard seed
    1 c. water
Preparation
    Grind together zucchini, peppers, onions and celery. Add salt and let stand overnight in refrigerator. Next day, drain; rinse with a little cold water (sort of press the water out of it). Then add remaining ingredients; mix and cook for 15 minutes. Pour into hot jars and seal.
