Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beaten
    2 c. sugar
    1 c. vegetable oil
    1 tsp. vanilla
    2 c. grated zucchini
    3 1/2 c. sifted all-purpose flour
    1 tsp. salt
    1 tsp. soda
    1/4 tsp. baking powder
    1 tsp. cinnamon
    1 c. pecans, chopped
Preparation
    Combine eggs, sugar, oil and vanilla in a large mixing bowl; beat well.
    Stir in zucchini.
    Sift together dry ingredients; add to zucchini mixture.
    Fold in pecans.
    Turn into 2 well-greased 9 x 5 x 3-inch loaf pans.
    Bake in 350\u00b0 gas oven for 1 hour or until done.
    Cool in pans 5 minutes.
    Remove and finish cooling on rack. Makes 2 loaves.
