Zucchini Cake - cooking recipe
Ingredients

3 c. ground zucchini
3 c. sugar
3 c. flour
1 tsp. soda
2 tsp. vanilla
2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking powder
1 1/2 c. cooking oil
4 eggs
1 c. chopped pecans
Preparation

Beat eggs and sugar, oil, zucchini and vanilla.
Sift flour, soda, salt, baking powder and cinnamon.
Add to egg and sugar mixture.
Add nuts and blend well.
This makes 2 cakes.
I use two 9 x 13-inch glass dishes or a Bundt pan and a small tube pan.
