Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil (I use canola)
    3 tsp. vanilla or more per taste
    3 1/2 tsp. cinnamon
    1 tsp. nutmeg
    1 c. raisins or other drained fruit (no juice)
    3 c. grated zucchini
    3 3/4 c. self-rising flour
Preparation
    Mix oil, sugar, eggs and spices well.
    Add zucchini.
    Stir in flour and mix well.
    Bake at 350\u00b0 for 45 minutes or until brown. Makes 3 loaves.
