Zucchini-Chip Omelet - cooking recipe

Ingredients
    3 Tbsp. butter or margarine
    1 medium onion, thinly sliced
    1 clove garlic
    2 lb. zucchini, coarsely grated
    1 1/2 tsp. salt
    1/4 tsp. pepper
    2 eggs, unbeaten
    1/2 c. milk
    1/3 c. grated Parmesan cheese
    1/2 c. potato chips, coarsely crushed
    paprika
Preparation
    Preheat oven to 350\u00b0.
    In large skillet melt butter and saute onion
    and
    garlic
    until golden brown.
    Remove garlic. Add zucchini,
    salt and pepper.
    Cook, covered, 5 to 7 minutes until zucchini is fork-tender. Beat eggs with milk and cheese. Combine zucchini
    and
    egg
    mixture
    in 1 1/2 quart casserole. Sprinkle with potato chips and paprika.
    Bake about 20 minutes until firm and set.
    Makes 6 generous servings.
