Zucchini And Tomato Saute - cooking recipe
Ingredients

1 Tbsp. oil
1 medium onion, chopped
1 clove garlic, minced
3 medium tomatoes, peeled and chopped
1/2 tsp. each: salt and dried basil
1/4 tsp. each: sugar and oregano
dash of pepper
1/4 c. chicken broth
1 1/2 lb. zucchini, unpeeled and sliced
Preparation

Saute onion in oil in a frypan until soft.
Mix in garlic, tomatoes, salt, basil, sugar, oregano, pepper and chicken broth. Bring to a boil, lower heat and simmer 20 minutes, covered.
At the end of 20 minutes, uncover.
Mix in zucchini; over medium heat, cook until tomato sauce is reduced and thickened, about 10 to 15 minutes.
Salt to taste and serve.
