Carrot Bread - cooking recipe

Ingredients
    1 c. sugar
    3 c. Mazola oil
    2 eggs
    1 tsp. soda
    1/3 c. nuts
    1 c. grated carrot
    1 tsp. vanilla
    1 tsp. salt
    1 1/2 c. flour
Preparation
    Mix sugar, oil and eggs until well blended.
    Sift flour, soda and salt together.
    Add dry ingredients to egg mixture.
    Add nuts, carrots and vanilla; blend quickly.
    Pour into well greased loaf pan.
    Bake at 325\u00b0 for 1 hour.
    Best if let to set 1 day for easier slicing.
