Ingredients

1-1/3 c. Sugar
2 Eggs, well beaten
2/3 c. Shortening
2 tsp. Lemon Extract
1 level tsp. Baking Soda
2-1/2 c. Flour
1/2 c. crushed Pineapple
Nuts (optional)
Preparation

Mix together the first 6 ingredients.
Fold in the Pineapple and Nuts (if desired).
Drop by teaspoonfuls onto cookie sheet. Sprinkle with sugar.
Bake at 375 for 8 - 10 minutes.
