Banana Nut Bread - cooking recipe

2 1/2 c. sugar
1 c. shortening
3 eggs
1 1/2 c. mashed bananas
3 c. flour
1 1/4 c. buttermilk
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. vanilla
1/2 c. chopped nuts (optional)
Preparation

Cream sugar and shortening.
Add eggs, one at a time, mashed bananas and vanilla.
Add dry ingredients alternately with buttermilk and chopped nuts.
Put in 2 (9 x 5-inch) loaf pans and bake for 45 to 50 minutes, or until a wooden pick comes out clean when inserted, at 350\u00b0.
Cool for 10 minutes, then remove from pans.
Slice when cold.
Keeps moist when tightly wrapped. Freezes well.
