Banana Loaf(Diabetic) - cooking recipe

Ingredients
    2 egg whites, lightly beaten
    1 c. bananas, mashed
    1/4 c. sugar
    1/4 c. Mazola corn oil
    1 tsp. vanilla
    1 1/2 c. all-purpose flour
    1/2 c. walnuts, chopped
    1/2 c. raisins
    1 1/2 tsp. baking powder
Preparation
    In a medium bowl, stir together egg whites, bananas, sugar, oil and vanilla.
    In a small bowl, stir together flour, walnuts, raisins and baking powder.
    Stir into banana mixture until well mixed.
    Turn into a greased and floured 8 x 4 x 2-inch loaf pan. Bake at 350\u00b0 for 60 to 65 minutes or until done.
    Cool in pan 10 minutes.
    Remove from pan.
    Cool completely on wire rack.
    Yields 1 loaf, 16 slices.
    Exchange, 1 slice:
    2 bread.
