Summertime Zucchini Saute - cooking recipe

Ingredients
    1/4 c. butter
    1/2 c. (1 medium) chopped onion
    1/2 tsp. salt
    1/2 tsp. basil leaves
    1/8 tsp. garlic powder
    3 c. (4 medium) unpeeled, shredded zucchini
    1 c. (1 medium) cubed 1/2-inch tomato
    2 Tbsp. sliced ripe olives
    1 c. shredded Cheddar cheese
Preparation
    In 10-inch skillet, melt butter over medium heat.
    Stir in onion, salt, basil leaves and garlic powder.
    Cook, uncovered, stirring occasionally until onion is crisply-tender (4 to 5 minutes).
    Stir in zucchini.
    Continue cooking, stirring constantly, until heated through (2 to 3 minutes).
    Sprinkle tomatoes, olives and cheese over zucchini.
    Cover.
    Cook 2 minutes.
    Serve immediately.
    Yield: 5 (1/2 cup) servings.
