Lemon Refrigerator Cookies - cooking recipe

Ingredients
    1/2 c. butter, softened
    1/2 c. sugar
    1 egg
    1 Tbsp. lemon juice
    2 tsp. grated lemon peel
    1 1/2 c. flour
    1/4 tsp. salt
    additional sugar for sprinkling
Preparation
    Beat butter and sugar until fluffy.
    Add egg and beat until smooth.
    Beat in lemon juice and lemon peel.
    Stir in flour and salt.
    Divide dough in half and place on a large square of waxed paper.
    Knead lightly to blend thoroughly.
    Shape each half into a roll about 1 1/2-inches in diameter.
    Wrap rolls in waxed paper, twisting ends of rolls closed.
    Refrigerate at least 4 hours (dough can kept up to 1 week in refrigerator).
