Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. onion
    2 green peppers
    1/2 c. salt
    1 tsp. celery seed
    1/2 tsp. pepper
    2 Tbsp. cornstarch
    2 1/2 c. vinegar
    4 1/2 c. sugar
Preparation
    Grind zucchini, onions and green peppers coarsely and add 1/2 cup salt.
    Place in large bowl, cover and let stand overnight. Next day, drain and rinse in cold water.
    Then add rest of ingredients and bring to a boil for 20 to 30 minutes.
    Put in jars and seal.
    Will keep unsealed in refrigerator indefinitely.
