Zucchini Pineapple Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
3 c. flour
1 tsp. baking soda
1/2 c. white raisins (optional)
1 c. drained crushed pineapple
2 c. sugar
3 c. unpeeled, grated zucchini
1 tsp. baking powder
1/2 tsp. salt
1 c. chopped fine pecans
Preparation

Beat together eggs, sugar, vanilla and oil in large bowl.
Add zucchini.
Combine flour, baking powder, soda, salt, raisins and nuts.
Add to zucchini mixture.
Add pineapple and pecans and mix well.
Pour into 2 greased and floured 9 x 5-inch loaf pans.
Bake at 350\u00b0 for 55 to 60 minutes.
Makes 2 loaves.
