Zucchini Bread - cooking recipe

Ingredients
    3 well beaten eggs
    2 c. sugar
    1 c. Crisco oil
    3 c. sifted flour
    3/4 tsp. baking soda
    3/4 tsp. baking powder
    1 tsp. cinnamon
    1 tsp. salt
    2 tsp. vanilla
    2 c. grated, unpeeled zucchini
    1/2 c. pecans (optional)
Preparation
    Mix together eggs, sugar and Crisco oil.
    Mix together flour, baking soda, baking powder, cinnamon and salt and combine with first mixture.
    Mix vanilla, zucchini and pecans with the rest. Put in well-greased and floured loaf pans (2).
    Bake at 350\u00b0 for 1 hour and 10 minutes (45 minutes if in 6 small pans).
