Sweet Potato Bread - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 1/2 tsp. baking powder
    1/2 tsp. salt
    1/4 tsp. ground allspice
    1/4 tsp. ground nutmeg
    1 c. mashed, cooked sweet potatoes
    1/2 c. firmly packed brown sugar
    1/4 c. unsalted margarine, melted
    3 Tbsp. skim milk
    2 eggs
    1 tsp. orange rind
    1/4 c. chopped pecans
    vegetable cooking spray
Preparation
    Combine first 4 ingredients in a large bowl; set aside. Combine potatoes, sugar, margarine, milk, eggs, orange rind and nuts, beating well. Add to dry ingredients, stirring until just moistened. Pour batter into 9 x 5 x 3 loaf pan coated with vegetable cooking spray. Bake at 350\u00b0 for 45 minutes or until wooden toothpick inserted in center comes clean. Cool in pan 10 minutes; remove from pan and cool completely. Yield: 1 loaf, 18 1/2 slices (122 calories per slice).
