Ingredients

1 c. sugar
3/4 c. shortening
2 1/2 c. flour
2 eggs
20 oz. can crushed pineapple, drained well
1 tsp. baking powder
1 tsp. baking soda
1 tsp. coconut flavoring
1/2 tsp. salt
Preparation

Cream shortening and sugar well.
Add eggs and beat well; add pineapple.
Sift the dry ingredients and add to first mixture and beat well.
Drop by spoonfuls onto a greased and floured cookie sheet and bake until light brown at 375\u00b0.
