Zucchini Bread - cooking recipe
Ingredients

1 c. all-purpose flour
1/2 c. whole wheat flour
1/3 c. quick cooking rolled oats
1 tsp. baking soda
1/2 c. butter or margarine
1/2 c. sugar
2 eggs
2 Tbsp. milk
1 tsp. vanilla
1/2 tsp. lemon juice
1 c. finely shredded zucchini
1/2 c. chopped walnuts
Preparation

Combine flours, oats and baking soda.
Set aside.
In large bowl, beat butter with an electric mixer (medium speed) for 30 seconds.
Add sugar;
beat until fluffy.
Add eggs, milk, vanilla and lemon juice.
Beat well.
Stir in zucchini.
Add flour mixture gradually while beating on low speed until combined.
Stir in walnuts.
Spread in greased ring mold or 8 x 4 x 2-inch loaf pan. Bake in 350\u00b0 oven, 55 to 60 minutes or until a wooden toothpick inserted in center comes out clean.
Cover with foil the last 10 minutes of baking.
Cool completely for easy slicing.
Makes approximately 12 servings.
