Zucchini Boats - cooking recipe

Ingredients
    2 large zucchini
    1 lb. bulk sausage
    1 c. saltine crumbs
    1 egg, beaten
    1/4 tsp. thyme
    2 Tbsp. Parmesan cheese
    1 c. shredded Mozzarella cheese
    1 medium onion
    garlic salt to taste
Preparation
    Parboil zucchini until just fork tender.
    Cool.
    Meanwhile, brown sausage and onion.
    Drain off fat.
    Cut zucchini lengthwise. Scoop out and discard seeds.
    Scoop out pulp, almost to rind.
    Add pulp to sausage, along with cracker crumbs, thyme, eggs and Mozzarella.
