Jeanne'S Pineapple Cookies - cooking recipe

Ingredients
    1 c. shortening
    1 1/2 c. sugar
    2 eggs
    1 small can crushed pineapple, drained (save juice)
    1 tsp. vanilla or lemon flavoring
    3 c. sifted flour
    1 tsp. soda
    1/2 tsp. salt
    1/4 tsp. nutmeg
    1/2 c. chopped nuts (optional)
Preparation
    Cream shortening and sugar; add eggs one at a time and mix until smooth.
    Sift flour with soda, salt and nutmeg, then gradually add to creamed mixture.
    If batter is too thick, add some of the pineapple juice.
    Add pineapple before using up all of the flour; this will keep the batter from becoming too thin.
    Bake 8 to 12 minutes at 350\u00b0 to 375\u00b0 or until lightly browned.
    Frost with a glaze when cooled and sprinkle with chopped nuts.
