Zucchini Bread - cooking recipe

Ingredients
    2 c. sugar
    1 c. oil
    3 eggs
    1 tsp. vanilla
    2 c. shredded zucchini
    3 c. flour
    1/4 tsp. baking powder
    1 tsp. soda
    1/2 tsp. salt
    1 tsp. cinnamon
    1 tsp. ginger
    1 c. chopped pecans
Preparation
    Cream sugar and oil.
    Add eggs and vanilla, beating well.
    Add zucchini.
    Sift flour, baking powder, soda, salt, cinnamon and ginger.
    Mix in gradually with the sugar, oil and egg mixture. Mix well.
    Add pecans. Pour in two loaf pans, greased and floured. Bake at 325\u00b0 for 1 hour.
