Zucchini Relish - cooking recipe
Ingredients

6 medium zucchini, unpeeled and sliced fine
3 medium onions, thinly sliced
5 peppers, seeded and chopped fine
1/4 c. kosher salt
2 c. packed brown sugar
1/2 tsp. turmeric
1/4 tsp. ground cloves
1 Tbsp. mustard seed
1/2 tsp. celery seed
2 c. cider vinegar
Preparation

In large enamel or stainless-steel pot, combine vegetables and salt; let stand 3 hours.
Rinse and drain, then set aside.
