Banana Nut Bread With Currants - cooking recipe

3 large ripe bananas
1/2 c. brown sugar
2 eggs
1/2 c. oil
1 tsp. vanilla
1 1/2 c. flour
3/4 tsp. salt
1 tsp. baking soda
1/2 tsp. nutmeg
1 c. chopped nuts
1/2 c. currants
Preparation

Puree the bananas in food processor.
Add the sugar, eggs, oil and vanilla and process just until blended.
Add flour, salt, baking soda and nutmeg.
Mix until combined.
Add nuts and currants.
Pour into greased and floured pans.
Bake at 325\u00b0 for 60 to 70 minutes or until toothpick comes out clean.
Let cool in pan for 10 minutes.
Remove from pan and cool completely.
