Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. vegetable oil
    1 Tbsp. vanilla
    2 c. coarsely grated zucchini
    2 c. flour
    1 Tbsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1/4 tsp. baking powder
    1 c. chopped nuts
Preparation
    In a bowl, beat eggs until frothy.
    Beat in sugar, vegetable oil and vanilla until mixture thickens and is lemon colored.
    Stir in zucchini.
    Sift in flour with cinnamon, baking soda, salt and baking powder.
    Fold in nuts.
    Pour mixture into a 2 greased and floured loaf pans.
    Bake at 350\u00b0 for 1 hour or until a toothpick inserted in the center comes out clean.
    Let loaves cool in the pans for 10 minutes.
    Cool on rack.
