Ingredients

1 c. corn oil margarine
1 c. sugar
1 c. brown sugar
1 tsp. salt
1 tsp. soda
2 tsp. baking powder
2 eggs
1 tsp. vanilla
2 c. plus 2 Tbsp. flour
2 c. quick oatmeal
2 c. Angel Flake coconut
Preparation

Cream the sugars and shortening. Beat in eggs, salt, soda, baking powder and vanilla. Mix in flour well. Add oatmeal and coconut.
Roll into balls the size of a walnut.
Press flat with fork dipped in cold water. Bake in preheated 375\u00b0 oven about 7 minutes (until light golden brown).
Cool on rack. Store in airtight container in freezer.
(One pound coffee cans are good containers.)
